Well.. Not only can Hayden not have wheat or dairy BUT no soy now either.. We have stayed away from soy mostly anyways cause of the female hormone tendencies. But now Hayden has a true allergy towards Soy.. So that means no Bittersweet bakery cookies.. cause of the shortening she uses. And no frosting from there.. So no frosted cupcakes.. All Hayden can have there now are some of the muffins. And a lemon bar. Sometimes Gluten and some dairy free just isn't good enough.
Also I was under the impression that any oats were gluten free.. WRONG! Oats in general are gluten free, BUT the facilities they are milled in.. and what they are transported with.. make them have gluten. And some companies just add gluten.. like Quaker.. They have like 80% gluten. So I am finding out there are like 3 brands of oats that are gluten free.. one being bob's red mill.
AND! The butter we found and love.. Earth Balance has soy in it... So we might have to go back to spectrum for Hayden.. that stuff is so spongy and gross.. I was told about GHee (Butter with out the dairy proteins).. and using coconut oil on things like pancakes.. or toast. Spectrum shortening works.. alright, luckily so I can make Hayden special cookies and frosting at home. So he will have Christmas cookies! I was worried for about 5 minutes until I remembered that shortening!
Soy is a tough one though.. cause there is soybean oil in so much.. like anything that says vegetable oil is typically soybean oil. Or potato chips.. a lot of them are fried in soybean oil.. This is so going to suck. So GLAD he can still do Corn though.. so Canola oil is okay. otherwise.. it would be olive oil.. or coconut oil .. or palm oil only. Which would get spendy when baking..
I think I am going to start experimenting more with frutose sugar.. cause cane sugar really isn't good for anyone.. And I can see some sensitivities developing.. So .. need to stay ahead of the rest. And by the time I can't eat it at all.. I need to have some recipies developed right?? :) Then that will Nix everything from the bakery..
So my baking experimenting never ends!!

wow! what a challenge! good thing you are creative and knowledgeable. Hayden is lucky you are his mom.
I have no idea about so much of that stuff! You are so knowledgeable, you are definately a subject matter expert! good for you.
My FIL has Celiac disease and doesn't do gluten. (I did a whole gluten free Thanksgiving for him this year. I was very proud of myself. I've only recently cooked at all. :)

This chick has used her crockpot every day this year...and all are GLUTEN FREE recipes. There are really easy to somewhat harder recipes. But I'm guessing most wouldn't have to be done in the crock if you didn't want to. And she gives her recommendations for GF products. I love it. Hope it helps.
